Basic Turkey Meatloaf

I just posted this on my blog but will share it here too. I once used 99% lean ground turkey and was unhappy with the results. I now use the 94% lean. A few more calories but delicious!

Basic Turkey Meatloaf

1 pound ground turkey
1/2 cup seasoned bread crumbs
1 small onion, chopped
1 egg, beaten
1 teaspoon worcestershire sauce
1/2 teaspoon garlic powder
1/4 teaspoon dry mustard (if you don't have dry just use a little yellow mustard)

Mix all indredients and place loaf in a baking dish sprayed with non stick spray. Bake for one hour at 350 degrees.

285 calories, 6 grams fat, <1 gram fiber
 
that sounds really good -

I'd probably add some chopped spinach or chopped mushrooms to give it some added moisture...
 
Im going to play with this recipe (i have been kicking around a meatloaf recipe)

I will add spinach and mushrooms and kick out some sort of tomato sauce for the topping. I will most likely serve it with either roasted sweet potatoes or butternut squash and some fresh steamed broccoli or green beans.

dijon mustard would be a nice touch to

somewhere in this recipes thread - i posted a recipe for thai meatballs that would also be great as a meatloaf - the base meatball was ground chicken cumin and coriander with some fresh basil - and the sauce was lite coconut milk with curry and a few other spices - really really good stuff...
