Balancing exercise and appropriate eating

Hello,
I've recently gotten back into exercising, I've always enjoyed it but I find that I mismanage my eating habits and end up gaining weight, not losing it.

For my start, I'm walking 5 miles three times per week and would like to get back into running. My biggest problem is that despite being able to burn 500 calories in an hour (so far, I know - meager) the next day I end up consuming way too many carbohydrates and empty calories. I'm hungry because my system needs to be replenished between exercise sessions, what can I eat to make the hunger go away and start losing weight? I've tried protein, but I find that it doesn't fix the problem. Also, like most people, I have too much difficulty moderating carbs and would like to find a way to cut bread, rice, and pasta out of my diet pretty much completely.
