Avacado spread on W/W bread

I spread avacado on whole wheat bread instead of mayo and then put some turkey breast on it and it was delicious. It was so good that I won't use mayo anymore on my sandwiches. The problem is that after putting a tablespoon or two on the sandwich, that still leaves a lot of the avacado left. I don't want to waste it. How can I save it? I put it in the fridge but it turned blackish. Is it still good?
 
yes its fine. I put avocado sandwiches i buy from the supermarket in the freezer, its fine
 
You actually don't have to do/mix anything with the avacado to have a spread. You take a ripe avacado, soft to the touch, and cut it lenght wise. Take the pit out and then just spoon the avacado out and spread it on your bread. You can mix it also with cream cheese to make a dip - I haven't tried that yet.
Joey007 - when you put it in the freezer, did the avacado change funny color? I have small tupperware containers that could store it in fridge or freezer. I will try this.
 
Don't worry about the color, it doesn't hurt anything. An old Mexican lady told my mother in law that if you put the pit in the bowl w/ the guacomole (or plain avacado), it won't turn brown. I don't know if it's true or not though.
 
yeah, avocados like many other fruits do some serious oxidation once left to their own devices :p just scrape that blackish stuff off the and underneath itll be green and as good as new :)
 
You could also scoop all of the flesh into a container, squeeze in half a lemon and mash it a bit with your fork. The lemon juice prevents oxidation, and it'll be ready to spread whenever.
