All Bran Muffins

1 1/4 Cups all-purpose flour
1/2 cup sugar
1 tablespoon baking powder
1/4 teaspoon salt
2 cups Kellogg's All-Bran Original Cereal
1 1/4 Cups Fat-Free Milk
1 Egg
1/4 cup Vegetable Oil

Directions
1. Stir together flour, sugar, baking powder and salt. Set aside.

2. In large mixing bowl, combine Kellogg's All-Bran Original cereal and milk. Let stand 2 minutes or until cereal softens. Add egg and oil. Beat well. Add flour mixture, stirring only until combined. Portion evenly into twelve 2 1/2-inch muffin-pan cups coated with cooking spray.

3. Bake at 400 F about 20 minutes or until golden brown. Serve Warm.

Yield 12 Muffins.

Variation: For muffins with reduced calories, fat, and cholesterol, use 2 tablespoons sugar, 2 tablespoons oil, and substitute 2 egg whites for 1 egg.
I found this recipe to be a really healthful choice that is high in fiber. About 5 grams of fiber per muffin.

What I do to make it healthier is subtract half the oil and sugar and replace it with more all-bran and egg whites. Also Fiber One has the most fiber of all cereals so that will add more fiber.
 
Alright I altered the original recipe for perfection on health. Any suggestions to even make it better health wise feel free to post it. This is what I used to make 12 muffins.
1/8 Cup Canola Oil 28g Fat/2g Sat Fat/8g Poly Fat/18g Mono Fat
1/8 Cup Sugar 24g Sugar
3 Cups All-Bran Extra Fiber 6g Fat/78g Fiber/ 42g Other Carbs/ 18g Protein.
4 Jumbo sized Egg Whites 32g Protein
1 1/4 Cup Skim Milk 15g Sugar/ 12g Protein
1 Cup Wheat Flour 21g Fiber/21g Protein/94g Other Carbs
1 tbsp. Baking Powder. No Calories.

Total all 12 muffins 34g Fat/39g Sugar/83g Protein/99g Fiber/136g Other Carbs.
1 muffin= 3g Fat/3g Sugar/7g Protein/8g Fiber/11 Other Carbs=111 Calories
Fiber doesn't count as calories.
