A Yankee like me couldn't give Gumbo a proper description, but since I trucked a lot and got fat eating all over the U.S. of A., I have run into my share of gumbo. It's basically a stew with lots of okra and shrimp (or about any other base - Chicken is usually the most popular) all jazzed up with spices in a thick sauce served over a bed of rice.
To me, some of the best gumbo I've eaten wasn't even on a bowl, rather on a plate the sauce was so thick and wow was it tasty. I use to get a chicken and sausage gumbo down in Morgan City La. that was just mindblowing.
This dish varies so much from region to region and what to use it's impossible to argue over who, how or what to use to make the best.
If all this gumbo talk is giving you a hankerin' to try some, don't expect Campbell's to give a quick fix, I'm not sure what they think they're making in that factory but it sure isn't 'gumbo' - it's more like a watery rice soup with a chicken cube tossed in.
As a Yankee, I sure took a likin' to cajun food, some of that stuff is mighty powerful eatin'.
