6 pounds gained in a week?!?!

So i weigh myself weekly, as to not go crazy! (ya right, already there buddy). And last Sunday i was at 142. Today i jump on after my morning workout and its up to 148! I understand things like water weight, hormons and so forth, but here are a few facts.

1. I am male, no time of the month.
2. I havent changed my diet, if anything its stricter on things like Sodium (zero diet soda at all anymore). Oatmeal for breakfest, plain and an apple. Some 40 calorie wheat toast with a lunch of 2 servings of green veggies (brocilli and or green beans, if canned they are rinsed for 10 minutes)and a small portion of wheat pasta and or rice. Dinner is as its always been, vegetable based stir fry or left overs from lunch, each meal being at most 300 calories. Snacks during the day, ie the 5 meal plan, that are no more then 200 each!
3. I keep myself at 1500 calories, and have for the past 10 pounds of my weight lose.
4. I am 27, male, 6'2,I exircise in the morning, cardio and sometimes ab work. I have a 9 hour or 10 hour a day job in the restraunt field (i refuse to eat there) which keeps my on my feet all 10 hours and i work out nightly before bed, light cardio (running flights of stairs) and ab work.
5. I rarely eat sugar, or sugar subsitite. I only drink water or sometimes green tea.
6. My body shows zero signs of water retention, no swelling, no fatigue or bloating.
7.And i do not take medication save for multi-vitamin.

Over the past year and a half i have worked, very..very..hard to drop down from 400lbs. I want to weight 140 and maintain that weight. I have yet to suffer such a swing up on the scale, i have no slacked nor "had a splurge day". Frankly im worried, upset and pissed!

I know everyone is going to say its water weight and check the scale in another week. But i don't think so, and its driving me nuts! Help!!

p.s. My cloths have never felt looser..but i really don't think this is water weight, and if it is..HOW?!!? I don't eat barely any processed foods! Grrr...
 
If you're 6 foot 2, why do you have such a low weight target? 140 seems excessively low. I can't see why you wouldn't want to eat more and aim for a happy 160-170.

It honestly appears to me that you're making yourself miserable with aiming for 140.
 
1500 is too low for a 6'2 male, dude--Your body must hate you right now. Eat a bit more and see what the scales say. I had a few days of under 1000 when I began my diet and put on like 5lbs because my body clung onto whatever I gave it because it thought I was starving it. Congrats on coming down for 400lbs but technically, at 6'2 you are underweight.
 
Well, since you don't believe it's water weight (I HONESTLY believe it absolutely is water weight assuming everything you stated is accurate) then its could be something like:

innacurate calorie measurement, it's easy to say your eating 1500, but then come to find out you're eating 2500 (it's easier than you think),
or B. you could be eating salt that you don't know about, in some of the veggies or something (just guessing)...

again, my guess is it's water (I know you don't want to hear that :p)
