Could you make a list of foods you love to eat but aren´t a lot of work and are still somewhat healthy?
Healthy for me might not be considered healthy for someone else. I guess I would consider a healthy food as a food that has a decent amount of protein and a workable amount of carbs. Vegetables.. Fresh is best but the ones flash frozen is a good option. Canned is an ok fall back but they have a ridiculous salt content. Fresh fruit of course. I try to stay away from ready to eat microwave foods. They are highly processed and tend to be food flavored salt and chemicals. The only exception would be the frozen indian food dinners. One is chicken tandoori with saag. The other is saag paneer. It's about all I can find that doesn't use rice or potato as a base.
Easy foods....
Bacon and eggs and I just healthy it up the best I can. Eggs are cooked in a non stick skillet so I don't need any oil. The bacon is baked because it's easy and it cooks out a lot of the fat. I set the oven at 400 degrees and put in the bacon that has been laid on a cookie sheet pan. I put it in the oven while it's pre- heating so it comes up to temp with the bacon inside. I cook it for 16 minutes and take it out and turn the bacon and put it back in for 5 minutes. I'm not a fan of crunchy bacon so this works well. It's soft but also cooked all the way through. It also removes a lot of fat. Its odd how much fat there is in bacon.
I'd say it's fairly healthy except for the cholesterol in the eggs. I have always had a good cholesterol level so I don't think about it much.
Tuna fish salad..
Canned tuna and a small amount of mayo plus onion, roasted red pepper, dill pickle relish, 1 boiled egg(when I feel like going through the trouble), sometimes a small amount of diced apple for some crunch and sweetness. I normally just eat it out of a bowl but if you had the drive and determination you could put it over some lettuce with some sliced tomato and have a full blown salad. Or maybe fill some lettuce leaves with it and turn it into a wrap of sorts.
Most meat dishes can be cooked in the oven within an hour. Some fairly simple ones would be baked chicken parm and chicken cacciatore.
Parm- bake some chicken breast till just done. Top with a good marinara sauce and some fresh parm and pop under a broil. In about a minute the sauce is hot and the parm is all melted and gooey.
Cacciatore- in a skillet brown chicken breast on one side. Flip it and add some veggies like onion, bell pepper, garlic. Top with a can or two of tomatoes and season it how you like. I use salt and pepper and some dried italian herbs. Bake it until the chicken is done. You could serve it over some pasta or with a side of veggies.
Pork chops and potatoes. Take some pork chops and season how you like. Top with sliced potato and a few onion slices. Wrap in aluminum foil and bake.
Really any food can be healthy or at least healthier if you work at it.
