what to do with bok choy

if it's baby bok choy, you can slice the head in half, brush it witha little soy sauce and honey mixed and grill it so it gets lightly browned...

I like it in stir fry to..

sounds good. This is the full size one. So its a little tougher, a little more bitter. Thats why I'm thinking maybe soup. I'm thinking of an Asian soup. Ill throw out the first boiling water and that will get rid of alot of bitterness. after that ill prob just add soupy things like onions and celery and maybe some left over turkey meat and maybe some brown rice..... Its just one of those veggies i haven't used much.
 
Well I got around to eating the bok choy I had bought. Its not bad, the thick stems kind of have a cabbage taste and the leaves are more along the leaves of the spinach family. I thought it was really good and ill be buying it again soon. What I did is simply put it together and it made something similar to a long grain risotto.


Bok choy 60 calories
1 cup of onion 67 calories
½ cup of brown rice 150 calories
9 ounces of turkey 120 calories
1 portabella mushroom 26 calories
Salt, pepper, red pepper flakes, (garlic if you can have it)

Total is 423 calories for a huge bowl

Fist thing I did was cut up the bok choy and rinse it over and over. It seems the sand fairy had been there. Then I put it in some water in a large pan. As the water came up to a simmer the water started turning a green so I took it out and dumped it into an ice bath. That was for two reasons, One was to set the green color and the second was to stop the cooking. I didn’t want to end up with a pan of mush. This whole step is just used to get any bitterness out of the veggies. If you get the baby bok choy this step isn’t needed. Also make sure you don’t bring it to a boil because to don’t want to boil out all the veggies vitamins and such. Next I just rinsed out the pot and went in with the onions, and salt pepper and red pepper flakes and (garlic powder) and the turkey meat.Start with about a cup of water then add the ½ cup of brown rice and your mushroom and your bok choy. Now I used instant brown rice which is done in like five minuets. If you use a longer cooking rice just don’t put in your mushroom and choy in the last few mins and just let the steam warm them through.(remember your choy was already mostly cooked before). Think I will start to try new veggies because the aren’t bad…..
