What I eat each day, am I screwing up?

I'm looking to lose weight (arent we all) but I simply cannot follow a "pre-determined" diet plan that says what to eat when simple because my extremely busy schedule won't allow it. Here is what I eat basically every day:

Mon-Fri:
Morning: Glass of OJ at home and a Slim Fast Shake on the way to work(more habit than for weight loss)
During the day: handful of nuts, 1 or 2 sandwiches containing fresh deli turkey, cheese, low-fast mayo, honey wheat bread along with a handful of potato chips and a couple of oranges
Evening (after workout): varies, but usually a bowl of total or some kind of sandwich like above-throwing in some vegs and fruit.

The weekends are whatever, I usually eat out a couple of times but not fast food.

Am I just overloading on carbs with the bread and chips? I felt I needed the cheese and chips to add some fat to my diet, my calorie intake should be well below 2000, but I havent attempted to count.

I don't know what your weight is...maybe cut out the chips and replace it with raw veggies or a salad or instead of having so much bread have the salad with protein...chicken, tuna, eggs etc...cut out white bread, use whole wheat. You sound like your on the right track tho...just a few changes I would make...see what happens if you only have the one sandwich...instead of two. If you need the cheese...have cottage cheese or cut off a slice and have a snack...yogurt as well.
 
What I've been trying to do is go with the "many small meals" track, hence the couple of sandwiches each day. My weekday pans out like this:

7:30 glass of OJ
8:00 Slim Fast
10ish orange
12ish one sandwich, few chips
2ish fruit other than orange
5ish second sandwich plus second orange
6 get off work, weight train for about an hour plus 15 mins of intense cardio
8ish get home eat a couple of boneless/skinless chicken thighs (hate breasts) and some vegs.

bed at 11.

i know i could go with a much stricter diet but i wouldnt be able to follow it. i have to have some things to keep me going :D

forgot to mention, I'm about 6', weigh 185 and last i checked my body fat was pretty high, little over 20%
 
I'm working up to more cardio...I'm fairly out of shape. My resting heart rate is 72, those 15mins my rate hovers around 160, once I can keep it around 120 during those 15 mins I'll go longer.
