serves 2
2 cups medium size shrimp
4-5 cloves fresh garlic
1-3 tablespoons of lemon juice
1/2 cup of sun dried tomatoes (preferably the dry ones, soaked in warm water to reconstitute. if you can only get the ones packed in oil, rinse them off well with hot water and pat dry)
half a glass of white wine
3-4 cups fresh raw spinach per person
olive oil
salt & pepper to taste
put the spinach on plates or bowls
If you can grill the shrimp, that's the tastiest, but if not, sautee them in a little olive oil until they're not quite cooked. overcooked shrimp is not a good thing, so keep an eye on 'em.
chop the garlic finely and the tomatoes coarsely. When the shrimp is almost done cooking, add the garlic, wine, lemon juice and tomatoes. Drizzle in a little olive oil and stir. Let the sauce cook down and thicken slightly (just a couple minutes).
Then dump the warm shrimp and sauce onto the spinach. The heat wilts the spinach just slightly. MMMMMM! This is quick and easy and absolutely delicious. Adjust the proportions of wine/lemon to your taste, but you really can't add too much garlic to this.
