6 tbs good balsamic vinegar
1 tbs walnut oil (or a good olive oil)
1 tbs dijon mustard
1 tbs raspberry jam
1 tsp fresh thyme, chopped (1/4 tsp dried would be fine)
Put all ingredients in a small container, and shake really really hard til mixed completely - the mustard acts as a nice emulsifier making the dressing thick..
Was perfect over a spinach salad w/ tomatoes, beets (not pickled), strawberries, grapes, and red pepper.
(i claim 2 servings for it - but there was a lot of dressing left over in the bowl, so it really could be 4 servings
