Veggie Egg Whites

I've been making this recipe a lot for breakfast and its so yummy and healthy, I thought I would share it.

*1 cup yellow baby squash, chopped
*1 cup zucchini, chopped
*1/2 shiitake mushrooms (or any other kinds), sliced
*2 tablespoons fresh parmesan or romano cheese, grated
*1 cup egg whites (I buy them at the store already separated)
*1 tablespoon sesame or olive oil
*1/2 teaspoon butter
*Pam cooking spray

Heat nonstick pan; add oil and squash, zucchini and mushrooms; add some cooking spray and sautee until browned and cooked; add to plate and sprinkle with parmesan cheese. Once the veggies are cooked, melt butter in clean nonstick pan, add spray cooking spray and add egg whites; scramble and add to plate. Cover eggs with veggies and eat.
