Veggie Anyone? Mexican?

Hello! Emmmcookie and I are roommates and vegan. Any good recipes out there? Even if it's a recipe with chicken etc. that we could adapt using tofu or a substitute. We LOVE Mexican food, and Indian. Yum!!!
 
My son loves this recipe and it's relatively low in fat.
Mexican Lasagna

2 Baked Chicken Breasts - Shred the chicken
2 Green Onions
1 Red Pepper
1 Tomato
1 pouch of Taco seasoning
About 2 cups of low fat cheddar
No Fat Sour Cream
Salsa
About 6 or 7 Tortillas (cut in half)

Once the Cooked chicken is shredded add it to a pan and add 3/4 c of water and a pouch of taco seasoning, simmer for about 5 - 10 minutes

Chop up red pepper, tomato and green onion

In a lasagna dish layer tortilla's on bottom
Add chicken mixture, and some of the cut up veggies, then add cheese
layer again with tortillas, chicken, veggies and cheese, you can add another layer if you want

Bake in oven for about 15 minutes at 350 degrees just until cheese is melted

I always put salsa and s cream on side for people to add as not everyone likes them.

This is so good and so easy to make!
 
About 400 calories per serving, it's really good, I like it spicy so I'll sometimes add hot sauce to the chicken mixture.
 
Granny soup

Okay, this is my favorite soup in the whole world - especially when I am sick. My family has been making it for generations. It is WAY simple, but SO good. I usually eat it with corn bread, but I don't know how that works being vegan. Anyway, this is Granny soup...

(This makes a HUGE pot - you can reduce it.)

5 medium size potatoes, peeled, cut into medium cubes.
1 onion, diced
1 can of diced tomatoes
Pepper (lots of pepper - yum!)

Place potatoes and onion in pot and add water to cover the ingredients, plus a couple of inches. Add a good amount of black pepper. Cook until boiling.

Turn off heat. Add can of diced tomatoes. Stir and let sit 5 minutes.

Serve with cornbread (or not). Add salt and pepper to taste.
