very very healthy, of course you can add meat or other shit but it wouldnt be vegan then would it
just thought of this recepie tonite and made it, its a lovely earthy meal. no fat, low salt, just good stuff inside. good for a cold winter night...
ok so i dotn know how much i made, well it was two servings, but heres what i used
1 potato
1 carrot
230ml vegetable stock (use real stock or cubes)
half a head of broccoli, in small bits
chives
cider vinegar
lots of black pepper
fresh wholemeal bread
tin of chick peas
ok so first mash up the chick peas, so theres no whole ones left but so there still bits. then add the carrot, grated, and the head of broccoli in medium florets. add the chives, a spoon of cider vinegar (you can use oil instead apparently but im not too keen on oil) mix together well. add the vegetable stock and mix again evenly until everything is mixed and flat.
cover in foil & put in a dish and put in the oven at number 5.
start bioling the potato, once its done mash into lumps.
after the dish has been in the oven for 40 mins, add the potato, mix, and recover the foil and put back i nthe oven, for as long as yo ulike i guess. i could only stand another 20 mins cos the smell was lovely, put some of the casserole in a bowl, cover with a layer of chives and black pepper and serve with bread. mmmmmm
the recepie says to add wholemeal breadcrumbs but i have this real fear of soggy bread, so breadcrumbs and casserole is a no go area. it turned out ok. also the recepie says to add 2 tablespoons of oil and 1gram of salt but i dont like oil or salt. but add to taste
