Ultimate form of HIIT?

Hey, I play Ultimate in a league with my friends, and recently I've been reading about HIIT, which strikes me as a good, time-efficient way to not only increase my endurance and burst speed, but get in better shape.

Anyway, I was wondering if Ultimate could be considered, at the very least, a form of HIIT. It's not as mechanical (one minute sprint, 3 minute walk, repeat) but the way my team practices we have 3 5-man teams. 2 teams play to 3 points, then the losing team switches out. With 5 man teams and the area we play in, we're sprinting almost non-stop. Then if we lose we get a longer resting period, and if we win then we get a brief resting/water period.

HIIT?
 
In the same way that all other sports could be then yes?

Baseball - sprint to base and stop, rest, sprint again...
Football - sprint, catch, stop.
Soccer - sprint to get to space, rest while you can.
Rugby - sprint from ruck to maul and ruck. Rest while the ball is out of play.
