Real simple and quick:
1 whole wheat tortilla shell
3-4 slices turkey, I like the "natural" stuff with no preservatives
chopped Romaine lettuce (or spinach if it ever becomes available again)
other salad type of veggies (maybe some red onions, shredded carrots, etc.)
1/4 cup (or so?) Mozzerela (or your favorite) shredded cheese
Ranch (or your favorite) dressing

Place shell on a large skillet with medium heat. Using non-stick spray will usually just burn the shell so I prefer to not use it. Place the turkey down in a row across the shell and sprinkle the cheese on top. Heat until cheese just barely melts and take it off. Don't heat it too long or else the shell turns into a frisbee. Place lettuce and any other veggies you want over the turkey slices, and top with a small amount of dressing. Roll up and serve immediately.
