Turkey chilli

I can't give exact amounts just because I don't cook that way but Ill try not to lose ya....

1 package of ground turkey meat( try to stay away from the nasty stuff in the tube)
2 cloves of garlic
1 large red onion
grind you up a blend of Spanish spices you like. I like a blend of cumin,coriander,salt,pepper,red pepper flakes.
1 can of diced tomatoes
2 cans of tomato sauce
1 large fresh tomato
2 cans of ranch style beans
2 Tbsp of a good oil if you diet permits
2 jalapeños just to put in the pot to make the whole thing happy :)
1 small container of a good chili powder(darker the better)
(as you can tell I'm use to feeding an army)

chili is a Texas food of love thing so you wont get it wrong just do what feels right...

Start with a large pot on mediumish. Add the oil(it will keep the turkey from getting too much of a char on it) add the cut up red onion and cook till it gets soft. add the turkey meat and cook till its done. you can tell because it will turn into a whitish color. add your chopped garlic, Mexican spices and The chili power. (I normally put in the garlic at this stage because it keeps it off the direct heat and it doesn't seem as bitter) stir the chili powder in good and then add your cans of tomatoes and sauces and the fresh tomatoes. Next add your cans of ranch style beans and the juice in the can.( you can leave out the beans if your a purest and would rather just have the meat chili) put in two jalapeños to bring up the heat. If you char them on the burner first it adds a great flavor to the mix. use one of the cans to add a couple cans of water till the mix thins out. put the burner on simmer and simmer till it gets to the thickness you like. You can add more If you like chili soup.

This isn't strictly a low calorie recipe but its better than the full calorie one made from beef.
 
Hillbillylee, can you cook the ground turkey in a non-stick skillet with water? I can't usually cook with oil because it makes me ill. Do you know if the turkey will still char?
 
Manaloa you know I have never really thought about it. It would just be like you steaming chicken breast or such. It would we in between steaming and boiling which should be fine. I just wouldn't add any seasoning till after you cooked the chicken and got the water out. I wouldn't throw the water away it has all the turkey goodies in it. after I cooked the turkey and got the seasoning in and such I would add the water in to thin the mix later. also if you put the water in the freezer for 15 Min's or so the fat should collect and harden at the top and make it easy to skim off. That way you would be adding lean turkey juice back in....
 
I rarely use oil any more for browning, if you cook in a non stick skillet, or even a very heavy pot, the turkey shouldn't stick so you really shouldn't need the oil, and if you move it around a bit, it'll get nicely browned...

When I cook meatballs, I cook them in the oven, rather than on the stove top, you might also put the turkey meat broken up onto a cookie sheet and cook it in the oven til it's done - then add it to the pot.. avoiding the oil

and if you lower the heat, the onion will sweat and give off juices rather than brown up or burn up...

just a thought, that might or m ight not work
 
The oil is really because thats the way I have always done it. Its the way I was taught to cook. Its kind of like when I bake a pie I put in one slice in the top crust to vent the steam and two more because grand-maw did it that way.There are ways around the oil I just think it does something to the flavor of the chili. Now if the oil makes you sick I wouldn't use it. I use it because most oils have 120 calories a tablespoon and that is going into a pot of about 10 gallons of chili. so unless you eat the whole pot which I don't recommend the oil is one of those things you can have or not. lets see 2 tablespoons of oil are 240 calories and you divide that by 10 gallons of chili that leaves you 24 calories a gallon. One serving would be probably be a 10th of a gallon so its a whopping 2.4 calories extra. Though that is 2.4 calories that can go toward something else. There are always ways around the fats in dishes we just have to get creative. now if I can just make my tamales without the lard....... :confused:
