Tuna Lunch Recipe: Low Carb
A friend of mine wanted to prepare lunch for me, and I had forbid her to use bread. I just didn’t want the added carbohydrates. I prefer my carbohydrates to come from very low glycemic carbs, and not from high glycemic white bread. What she came up with was fabulous, and I have been eating this once a week for lunch ever since. I would like to share it with you.
Ingredients:
1 Large Seedless Cucumber
1 Can Tuna in Water (Drained)
1 teaspoon of Fat Free Miracle Whip
1 small red pepper chopped up
Take the Cucumber and cut it into four inch sections, take the sections and then cut them in half.
Next, take the rounded bottom of the cucumber sections, and slice off a small amount so that it will sit flat on a plate (and not rock back and forth.)
Mix together the Tuna and Fat Free Miracle Whip
Spread tuna on top of cucumber section and top it off with chopped red pepper
Makes Two Servings!
