Throwing off your calorie count to lose weight?

Its been almost exactly 3 monthes since ive decided to lose weight and im doing great jmy last weigh in in was down 21 pounds which is probably a bit high but ive upped my calories a bit since then. Anyways..

About once every 7-10 days or so ill eat about 1500 extra calories on a day (im usually at 1300 and on that day ill hit about 3000).

Ive been losing weight doing this, ive read that your body can adjust to the amount of calories you eat if you do it for a while, so eating that extra amount of calories, could it possibly cause your body to not get adjusted to regularly low amounts of calories? and from that losing weight more efficiently?

Or is the weight still dropping off because of the other good days?

EDIT: The extra calories are generally not because of junk food.
