The Final 10! HOW?

At age 64 I took up bicycling to get in shape (after 35 years riding a desk) and to lose a bit of weight. Most of my adult life I stayed at 147 lbs (I am 5-6) but went up to 180 after a couple of retirement years. I managed early on to get down to 160 and in addition to the weight loss I have greatly improved my overall fitness. I ride about 175 miles a week at some pretty good speeds for my age. HOWEVER, I am now stuck at 160. I try to watch what I eat, but at this point the "calories in - calories out" concept just is not producing results. Any answers? I'm sure I could go on one of those temporary diets but no way. I firmly believe that a "diet" is for life. My son, a doctor and marathon runner says that all I have to do is increase my mileage to say 250 per week and I will soon be at 150. Not so sure. SO, how about some been there done that advice?
