Again - not a fan of the rabbit food but this was quite tasty..
8 -10 ounces sirloin
1 head of bibb lettuce (or boston lettuce)
2 large handfuls arugula
1/2 english cucumber (seedless) halved and sliced
2 shallots, sliced thin
1 package grape tomatoes, halved
1 hanful cilantro, chopped
Dressing
3 thai chilis, seeded and sliced thinly (or one largish jalapeno)
3 large cloves garlic, sliced thin
1 tsp brown sugar
2 tbs fish sauce
Juice of 2 limes
Trim off any visible fat from steak, broil the steak until medium-rare.
Cool and slice thin into bite sized pieces.
Mix garlic, chiles, fish sauce, lime juice, and sugar in a small bowl.
Add the sliced meat and toss with the cucumbers, tomatoes, arugula and shallots.
Make a bed of the lettuce on a serving plate. Place the beef on top. Garnish with cilantro.
Makes 1 large dinner salad and enough left over for lunch the next day.
