I found this on recipezaar and gave it a try, it was really good and made for a great side dish and lunch. I know it sounds weird to mix lime juice, vinegar, fish sauce and peanut butter but the dressing was actually the best part. So good that I doubled the amounts to make it a little more saucy. It's super low cal and tastes great if you're into Asian food. I ate this with meals every day during the first week of my new meal plan and it kept me satisfied and kept me from not missing the salty foods I had been eating.
3 tablespoons fresh lime juice
3 tablespoons rice vinegar
2 tablespoons fish sauce
1 tablespoon water
1 tablespoon creamy peanut butter
1 teaspoon chili paste with garlic
1 clove garlic, minced
6 cups shredded napa cabbage (Chinese)
2 cups shredded red cabbage
1 cup red bell peppers, strips
1 cup shredded carrots
2 tablespoons chopped dry roasted peanuts
1 tablespoon chopped fresh cilantro
1 tablespoon chopped fresh mint
Combine lime juice, vinegar, fish sauce, water, peanut butter, chile paste and garlic in a large bowl, stirring with a whisk until blended.
Add cabbages, bell pepper, and carrot, and toss gently to coat.
Cover and marinate in refrigerator 1 hour.
Stir in the peanuts, cilantro, and mint just before serving.
