Tagliatelle with mange tout, peas and salmon

This recipe is quick to make (approximately 10 minutes to prepare and 15 minutes cooking), which is ideal for busy lifestyles. It is low in fat and saturated fat, as well as containing vegetables to contribute to your '5 a day' and fibre intake. The salmon provides a source of oily fish, proven to be beneficial for healthy hearts.

Ingredients

  • 225g (8oz) tagliatelle (this is a calorie controlled portion size of pasta, so may need increasing dependent upon your energy requirements for your activity levels)
  • spray olive oil or 1-2 teaspoons olive or rapeseed oil
  • 1 small onion, finely chopped
  • 100g (3 ½ oz) mange tout
  • 100g (3 ½ oz) smoked salmon (boneless tinned or fresh), shredded
  • 75g (2 ¾ oz) petit pois peas (frozen or tinned-low salt variety)
  • 225g (8 oz) very low fat plain fromage frais
  • 100g (3 ½ oz) low fat soft cheese with garlic and herbs
  • basil leaves, shredded
  • salt and pepper to season
  • basil leaves to garnish

Method

  1. Cook the tagliatelle in boiling water, according to packet instructions (approx 8-10 mins), until just tender.
  2. Meanwhile, heat the oil in a saucepan and sauté the onion until soft, approximately 3 minutes. Add the mange tout, salmon and peas. Cook, stirring for another 2-3 minutes.
  3. Add the fromage frais, soft cheese and basil leaves to the saucepan. Gently heat, occasionally stirring, for approximately 4 minutes. Season with salt and pepper.
  4. Drain the tagliatelle well and combine with the sauce and stir to mix.
  5. Serve garnished with basil and a side salad.

Mange tout (or snow pea) is a legume, more specifically a variety of pea eaten whole in its pod while still unripe. They provide protein, carbohydrate and fibre and are an excellent source of vitamins A and C - plus are really tasty.
