Sweet Potatoes

I usually cook them in the microwave hehe. Spock used to be in the food prep industry, maybe she can give you some better ideas. I like them in the microwave with just a little bit of butter.
 
Quickest would be microwave. The way we always do it is we cut them up into about 1" tall discs, lay them out on a pan, put brown sugar & cinnamon & a little margarine on top, cook on 350 until browning.

Sometimes we add diced walnuts or almonds, too.

I usually microwave em for about 5-7 minutes, turning every 2. I'm also normally short on time too.
 
fork the potato, wrap it in a moist paper towel, and microwave 2-5" per side (depending on the size).

Tastes very good with some cinnamon and natural applesauce on top
 
Thanks everyone...I made some today and love it. All I did was microwave then added some spray butter. I like the idea of cinnamon i'll have to do some experimenting. If anyone has any other healthy tasty meals please let me know. I was thinking of buying the Eating for Life book by Bill Philips...Any feedback on that?
 
my wife & i like 'em mashed. i cut them into half inch thick discs, steam them for awhile until fairly soft but not mushy, then use a mixer to "mash" 'em. as i mix them i usually pour in a little FF milk, too. then top 'em with some spray margarine and a little salt and pepper. and i'm with you allen, writing about it is making me hungry too, LOL!

that sounds yummy! Do you steam them in the microwave?
 
no i usually steam them ina steamer. now that i hear it mentioned though the microwave sounds a lot easier, and probably would lose less nutrients dripping into the steaming water.
we love sweet potatoes, though. probably eat them 3 or 4 times a week.
 
I've always sliced them thin, spray a cookie sheet with pam, salt/pepper to taste and bake and eat with katsup.

That's how I like them. Well, w/out the catsup - um ick - lol. It's a great snack. I need to start making them again, it would be handy to have when I get sugar muchies, plus it's great for little ones.

Just cut them abt the size of McD french fries, toss w/a little olive oil, salt/pepper if you like and bake around 350 - 375 for abt 20 min or so. Just depends if you like them a little soggy or crispy.

I've heard of using egg whites and chili powder too. Also, you can do maple syrup and tamari or soy sauce mixed together and drizzled over before cooking.

I think it's better to just eat them plain myself.
 
Well, I cut about 2 or three into slices, and add zucchini slices, sprinkle salt and chopped fresh parsley...spray the bottom of a glass pan with cooking spray and set it in the oven for 45-60 minutes. They are juicy and flavorful after.
