Sugar Free Fruit Sorbet

I'm diabetic, so I'm always looking for low calorie, sugar free, GOOD TASTING desserts. I tried this last week, and it was great; even my VERY picky step father and 4-year-old grandbabies loved it. I didn't realize until later that I'd mis-read the original recipe, but I'm sure "my version" is best, so here it is:

1 pound of strawberris, stemmed and cut in quarters
1/2 cup unsweetened apple juice

Freeze the strawberries in a single layer until hard. About 30 minutes before you want to eat the sorbet, take the berries out of the freeze to soften slightly. Put the softened berries in a blender with the juice and blend until smooth. Serve right away.

This is fat free, sugar free, very low calorie (under 100 calories in a 2/3s cup serving) and GOOD.

It's also versitle. You can substitute pretty much any fruit you want and any juice or liquid.

And if you want creamy and don't mind processed foods, stir in some fat free Cool Whip. (This version will not be sugar free!) My daughter made hers this way and raved over it.

For the lazy, like me, you can save yourself some steps.. and just take some frozen strawberries, or raspberries,or the mixed berries (cherries are a little too sweet for me) and just whir 'em up in a mini food processor with just some lemon juice..
 
I didn't have anything left over to freeze, Avi2Kat, but I'm sure it would. Take it out of the freezer a little while before you plan to serve, and if it is too "icy," whirl it in the blender a minute to make it smooth again.
