Stuffed tomatoes

I despise fish and seafood in general, but fish is high in protein, and pretty low cal, so I thought I'd share this really tasty stuffed tomato recipe for all you fish haters. (it's the only way I'll eat tuna).

1 - 7.06 oz pouch of Starkist chunk light tuna in sunflower oil. (you can use whatever you like but this is really tasty, and sunflower oil is low in saturated fat).

3.5 table spoons of Smart Balance Omega plus Mayonnaise (no trans or saturated fat!! )

1 quarter cup red onion diced. (any onion will work really)
1 quarter cup pickle diced (don't use relish, it has sugar added.)

One medium to large tomato.

Mix tuna, mayo, onion, pickles. Cut stem out of tomato and cut into wedges, but don't cut all the way through. Add half a cup of tuna mix to the tomato, and eat .

Less than 400 calories total. Tasty, and filling :)

1 tbs smart balance mayo = 50 calories x 3.5 = 175
Starkist tuna = 120 calories in 2 ounces = so a 7.5 ounce serving is probably 6 ounces of actual tuna - that's 360 calories..

How are you figuring under 400 calories?

tuna packed in oil - especially olive oil -while much higher inc alories than tuna packed in water - has a ton more flavor and far more yummy...

serving size tuna about 1/4 cup. 1/2 cup= 240 cal.
2 table spoons smart balance mayo = 100 calories
large tomato = about 50 calories

(you're not eating the whole pouch of tuna) could if ya wanted though.

that's 390 calories. It's not perfect, I know but it's around 400 cal, maybe less depending on how you make it.

Just eat the tomato! It's good for you. LOL

so your recipe isn't a single serving?

No, because it would be hard to fill the tomato. It's about two servings of the tuna, and two servings of the mayo. You'll have some of the mixture left over if you only use 1/2 cup of the mixture on your tomato.

I'm not Martha Stuart, just trying to share a tasty low cal recipe. It really is good, and has never caused me to to go over my caloric budget :)

I have been trying to eat seafood lately (have a slight phobia after being force fed it, then photographed with my mouth full of it and tears running down my face). Anyway, will deffo try this one out! I have a good recipe for tomato and chorizo cod if your interested.
