spinich and potato

Cut potato with skins into small pieces (inch cubed)
fry in a frying pan with a small amount of oil until slightly softening
add spices to potato when frying as taste permits I use paprika and chilli powder and a small amount of curry sauce/stock kept in the refrigerator.
once potato starts going soft add plenty of fresh spinich and fry with potato for a few mins.

Transfer all food to a oven dish and place in the over on a medium heat and cook until the potato is cooked through.

The key is to get the right spices which is a personal taste thing.
