I saw this on an Australian Cooking show called Ready Steady Cook..sort of like a cheesy version of Iron Chef anyway...
Get some medium size pototoes and put them in a microwave safe dish and cover...and cook on high for 10 minutes or until a knife pierces them with ease...get the side of a big knife and push down on the potato until it is about half the size of what it was before...put some olive oil in a pan and fry the potato until golden brown on each side...serve with Low Fat Sour Cream and Sweet Chilli Sauce...i made this for the first time tonight and it is KICK ARSE.
