Brown a pound of turkey breakfast sausage in the bottom of a big, big, big pot
Get out the food processor, and chop to your desired degree of fineness (I'm not a veggie fan, so I chop small):
- a big yellow onion
- 2 pounds of carrots
- a bunch of celery
- any other veggies you want to use up (zucchini would be good, cauliflower probably not)
Toss the veggies into the sausage. Stir and cook down for awhile.
Add to the pot a 28 ounce can of diced tomatoes and a rinsed 1-pound bag of lentils. A tomato-can of water, a big spoonful of chicken broth concentrate (Better than Bullion is good). Sprinkle with some garlic powder (fresh garlic tastes off in this recipe), some thyme if you have it, a bay leaf if you have it.
Simmer on the stove until the veggies are as soft as you want. The lentils will be done in 30 minutes or so. I usually cook 2-3 hours. Top with a little cheese, if you like.
Makes about 17 cups of soup for about $9.
One cup of soup has 200 calories, 3.5g fat, 27g carbs (12g fiber), 16g protein.
