There are many ways to alter this if you use your imagination.
I first make the pico de guillo wich is a very popular salsa type mexican sauce served with tortilla chips usually.
Pico De Guillo
6-8 Large Roma tomatoes chopped up into about penny size pieces +/-
1 large onion chopped up
1 bundle of cilantro finely chopped up
1 lemon (freshly squeezed juice)
1 lime (freshly squeezed juice)
1/2 tsp minced or granulated garlic
(optional) 3 large jalapenos finely chopped
(optional) 1 avocadoe chopped
combine all ingredients above and chill for atleast 1 hr
On a dinner plate lay down a bed of romaine lettuce (iceburg not as healthy)
then take some canned salmon (I buy the cheap stuff and eat the bones and skin as they are loaded w/omega 3's as well as the oil) and scoop your desired amount over the bed of lettuce then after the layer of salmon put a thick layer of pico de guillo over the salmon (make sure you mix the pico real good before you put it on the salad ...you want your pico WET as the juices compliment the whole taste of the salad) Then I put some nuts on top and maybe some flax seed too to give it a crunch taste....try some roasted soy nuts. I like a few corn tortilla chips as well with this salad, but like I said you can alter as you see fit. Hope you guys enjoy
