My daughter snagged a pie pumpkin at the store, and I hate to waste the seeds. I normally need to shell my pumpkin seeds, but this recipe makes them yummy and crispy enough that I'm eating them whole.
(FYI, if you use FitDay, they show whole pumpkin seeds as having zero fiber. My best extrapolation is 5g per cup.)
We saved the seeds that clung to the pulp for future planting, and cooked the loose ones. One small pie pumpkin = 1/3 C finished seeds = 100 calories. I rolled them in a paper towel to get the excess oil off.
