1 large bunch of asparagus (I like the thinner stalks for this)
Any type of greens Baby spinach and romaine work well
2 large red bell peppers cut into strips
pine nuts or slivered almonds
Dressing,
Juice of a small orange
1/4 cup olive oil
1 tsp of freshly grated ginger
Cut asparagus into 1 inch lengths, brush asparagus and peppers with olive oil ( I use a mister for the oil)
Roast in a 400 degree oven until asparagus is tender (7-10 min)
top greens with aspargus and peppers sprinkle with pine nuts and dressing
This goes great with grilled shrimp or scallops.
