Creamy Carrot and Spicy Avocado Soup
4 cups chopped carrots
2 cups water
2 avocados
1 clove of garlic
½ tsp ground ginger
1 tsp curry powder
1 tsp lemon juice
½ tsp cumin
½ tsp Celtic sea salt/plant salt
½ tsp cayenne
Serve with:
¼ tsp fresh ground pepper
In a blender, process the ingredients until a smooth and creamy consistency is reached. Sprinkle with black pepper and serve.
