i like to call this PB cake
i made this yesterday and it turned out really good(imo at least)
its pretty moist and really healthy
ingredients
1.25 cup oats
1 cup cottage cheese
5 whole eggs
.25 cup flax seeds
1/2 cup almonds or 4 tbs peanut butter (or both if your bulking)
4 scoops whey(adds flavor and a protein boost)
1 tbs baking soda
2tbs honey or you can put in some splenda(both optional)
mix in a bowl until you get a goopy batter.
if it is runny, add more oats or whole wheat flour if you want.
pour into a pan(sorry, i dont know the dimentions of my heart shaped pan, which i use) sprayed with non stick spray.
cook in the oven at 350-400 degrees for around 12-18 minutes.
i found that spreading peanut butter(natural) on the top of the cake after it is done cooking make it taste reallly good. the peanut butter melts a little into the cake and its like a creamy frosting.
you can also put slices of fruit on top of it if you want. gives a lot of flavor. mmm fruit cake.
makes 6 servings, each with around (not exact)
300 calories
29.25 protein
18 carbs
12 fat(most "good" fats)
that is when the peanut butter is used, not almonds and honey is not used.
these are really healthy and taste good to me
