Pork Tenderloin with Mango Salsa

1 pork tenderloin, trimmed of all visible fat
(pork tenderloin is incredibly tender, relatively inexpensive, and only 35 calories an ounce)

Marinade
1 tbs low sodium soy sauce
1 tsp honey
juice and zest of one lime
2 cloves of garlic, crushed
1 inch piece of ginger, grated

Combine all marinade ingredients in ziplock bag, add pork tenderloin, seal bag and refrigerate for 30 minutes or several hours.

Fruit Salsa
1/2 mango, diced
4 strawberries, diced
1/4 small cantalouple, diced (watermelon is also really good here)
1 -2 jalapeno pepper, seeded and minced (if you are daring, go for a hotter pepper, but I've found that scotch bonnets (haberneros) are too hot andit drowns out the flavor of the fruit, you want some heat, but not to overpower the fruit)
4 tbs cilantro, chopped
1 clove garlic, minced
juice of 2 limes

Combine all ingredients, toss gently, and refrigerate to combine flavors


Grill tenderloin til done... I use a grill pan, but a george foreman grill or an outdoor grill would be perfect. (It cooks really quickly ) Internal temp should be about 130ish when you take it off the grill, and let it sit for about 5- 10 mimutes where the temp will raise slightly.

Serve with fruit salsa on the side (this salsa is also amazingly good wiht simple chicken or turkey cutlets..)
