Pork Tenderloin (for the protein challenge)

Rinse and trim 1 cryovac pork tenderloin - two pieces should total about 2 pounds. Marinate in a mixture of soy sauce, sesame oil, garlic powder, and oriental worcestershire sauce (probably available in an Asian grocery - you won't find it in a regular grocery).

Preheat the oven to 500. Line a cookie sheet with foil, and spray a cookie sheet or roasting rack with nonstick spray. Roast the pork on the rack for 10 minutes, flip and roast for another 10 minutes.

Serve with spinach and rice.

3oz cooked weight = 160 calories, 5g fat, 26g protein.

If you take a small knife and poke it a few times, then in the poked spot, insert some sliced garlic - you add a ton more flavor to it...

and add some fresh ginger to the marinade to really kick up the flavor.. (hintsfrom maleficent - fresh ginger stores wonderfully in the freezer - so you can always have some on hand :)

I've never seen oriental worcesteshire sauce - how's it different than regular worcesteshire (I can't pronounce it or spell it) sauce...

I'm too lazy to mess with real garlic; I leave that to MIL. Ditto for whole chunks of ginger; I use the jarred stuff, but what I had looked a little suspicious, so I decided better safe than sorry.

I have no clue what's in oriental worcestershire, but it's sort of vinegary to me. Google says

Looks like standard WS has molasses in it - and the Asian variety is sugar based... but both have the essential ingredients of anchovies and tamarind... so I'd imagine the asian variety is less sweet
