Ok, I just made this up tonight, but it was soooo friggin good I thought I would share it.
Prepare Shrimp: peel, devein and sauté' in a bit of olive oil with garlic and ginger. Be careful not to let it burn. You could use pre-peeled or frozen if you want. Once the shrimp is cooked, chill it.
Tear as much red leaf lettuce as you want and put on a plate.
Add green bell pepper, red onion, your favorite tomato, sliced papaya, and sliced avocado. Top off with chilled shrimp and poppy seed dressing.
