Pepperoni

anybody make their own pepperoni? preferrably out of turkey. I have been buying a pre-made one from the supermarket but it contains sodium nitrite. My son loves pepperoni so I would like to make a homemade version to substitute.

That sounds good dude. Yeah, i just found out about the sodium nitrate crap to dude. I'll be lookin out for it. Maybe we could get a basic list goin on this site with some foods not to buy or something. Thanks for the recipe link
