Hey I was interested in this as well, and I ran a search. Here's an article I found.

Pepper has lots of benefits."It contains the essential oil piperine, which increases the absorption of nutrients in food," says Patrick Holford from the Institute of Optimum Nutrition.

In fact, so effective is piperine that you might literally double the nutritional uptake from food by going heavy with the grinder, says Holford.

Piperine is particularly high in black (not white) pepper.

The volatile essential oil is stored in the tough skin of the dried berries until it's cracked open by your grinder, when it evaporates.

And that explains why pre-ground pepper doesn't have anywhere near the same benefits.

If it's only the hotter type of so called peppers that tickle your taste buds, all is not lost.

Chillies are one of the richest known sources of vitamin C, and contain all kinds of cancer fighting antioxidants.
