I go to the gym but if I miss 4- 5 days without going and I eat a fair bit I go to the gym and I do 2 - 3 lots of weights and cardio instead of one to catch up on those times i didnt go is that normal?

weights you can overtrain with that 'catchup method', but not so much with cardio. You won't get the benefit of training 3x as much cardio to make up for 3 different days, but you will manage to do some 'catchup'.
