Need help......

Hello I am 16 and a junior in high school. This football season I quit football because of a torn rotator cuff. In May when I quit I was 6'1 252 and was lifting heavily 4 times a week and working on building strength. When I quit football I stopped lifting weights and was generally worried that I was going to gain weight and become pretty pitiful. It is now late November and I am down to 217. I haven't been working out at all but I have been staying active and watching what I eat. It is amazing once you stop lifting weights how much your appetite decreases. Well I have decided that I want to play football again and I want to get strong, without gaining any weight actually preferably losing weight and body fat, and tone certain parts of my body. I want to do my best to get down to 195 and I know it will require a lot of hard work but I am up to it. But my main worry is once I start lifting weights for football that my weight will increase greatly like it has before and I am looking for some tips to do what I asked above. Any suggestions, tip, helpful hints will be more than appreciated. Thanks for your help. :)
