Need help with nutritional recipes for the go

I'm a full-time nanny and go to college in the evenings. I normally leave the kids at 6:30/7 if I'm lucky. I start class at 8 but have to go to the other side of town, and barely make it to class on time. Usually I just grab a quick bit at McDonald's or something since I don't have time to eat with the kids. However, once I read an article of what the food there is made out of it lost me as a customer for good.

Basically, I'm looking for nutritional recipes that are easy and fast that not only the kids will like, but that I can eat with them before I have to quickly leave for class.

If there are any recipes out there I appreciate it.

I can see a challenge finding stuff that the kids like ...depends how entrenched their eatings habits are....

Are your kids open to new things and tastes? Are they interested in eating fruit and veg?

Do they like milk shakes?

You could all get a great start to the day by making a nutricious shake, and not have to spend hours doing it.

Assemble the ingredients the night before, and put them through the blender in the morning - should only take 5 minutes to prepare.

When you're done, put all the blender parts in a bowl of warm water if you don't have time to wash them right away.

Morning Shake

Basic ingredients

2 Ripe bananas
3 tablespoons of a mix of lecithin granules, ground flax seed and wheat germ
3 TBS finely ground almonds
2 scoops of soy or other protein powder (vanilla, chocolate and strawberry are the usual flavours)
3 cups of milk, soy milk or rice milk

Extra Ingredients

You can add other fresh fruit, such as raspberries, strawberries, blueberries, melon, mango, peaches, papaya and kiwi.

You can also add finely ground pumpkin and sunflower seeds to the blend.

Note: if this is not sweet enough, add a 1/4 to 1/2 teastpoon of Stevia to the dry ingredients. Experiment - Stevia sweetens with the merest hint. It is made from a herb and contains none of the chemicals in articifical sweetener while also having none of the bad attributes of sugar, honey or syrup.

PREPARATION

Measure all the dry ingredients into an airtight container the night before. Refrigerate

In the morning, put your liquid in the blender with the bananas (and or other fruit) and give it a whirl on low speed,. for about 30 seconds to one minute or until smooth.

Next add your dry ingredients and blend on slow for about 1 - 2 minutes, or until everything seems mixed. Now let it rip on high until it's nice and frothy.

Serve at once. Drink though a straw to avoid messy mustache. Give the kids funny straws and special glasses from which to drink to make it more intriguing for them.

This mix is loaded with nutrients and should keep everyone going til mid morning snack.

There are several different things I do for quick, healthy meals: soup and sandwiches like grilled cheese or peanut butter are easy for lunch, you can also buy canned, lowfat turkey chili (my husband couldn't tell it was turkey) and put lowfat cheese on it and eat it with baked tortilla chips. You can also cook some chicken, steak, or ground beef in a pan with fajita seasoning and cook some onions and bell peppers or whatever you like and serve it on warm tortillas. Fat free refried beans, lowfat cheese and lite sourcream for bean burritos is another easy meal. For dinner, Pork chops or whatever meat you like, instant mashed potatoes (I like the sour cream and chives kind) and green beans or some other vegetable is tasty and healthful. I hope this gave you some ideas.
 
I eat chicken wraps all the time. I just takt a tortilla shell, put some lettuce and tomatoes on there with a little ranch dressing. Since I grill chicken once a week it takes like 5 minutes to put together plus it's really tasty.
 
Usually what I do is buy a rotisserie chicken and use that for wraps or chicken for my salad or something like that..or maybe grill a bunch of chicken ahead of time before my week gets going so I can use it for many things. i also roast a big pan of veggies that I use during the week in everything. I truly love my crock pot also..for chili and lentil soups and all of that good stuff. The leftovers can be transformed into all kinds of other recipes. My wing it recipes are always my best..but i just can never remember them exactly ;-D
