Need help with my diet please.

Hello everyone,
I am 5'7 185 lb's.I was 200 lb's when i started my diet 3 weeks ago.My diet is very strict,and exercise intense, but it has worked for me more then 3 times in my life, but i lost my gall blatter most likely because of how fast i lost weight.

I am struggling to eat more then 1000 calories in a day.I really dont have the appetite since i started the diet.I also ride bike and burn over 1500-2500 calories daily.I take organic whole food dietary supplements.I only drink spring water, and eat low fat/low carb healthy foods like turkey,tuna,chicken,fruits and veggies.No junk food.

People say its not safe to eat under 1500 calories daily, that your body will go into starvation mode, and slow down, but to be honest, i have too much energy and barely wanna sit at home anymore.I dont feel burned out at all.

Other then excepting that i probably had to have my gallblatter removed because of fast weight loss in the past, i havent found any other downside to it, since my energy level is 10x better then before the diet.

Im hoping someone more experienced could shed some light on this, and maybe help me touch up my diet to a safer level.

Im averaging 5 lb's a week loss.My fat % went from 30% to 24% since 3 weeks ago so i dont think im losing muscle mass.My water % has stayed consistent.
 
have you tried eating maybe 2000 calories and changing up your workout. Your body will get used to your workout. Tried and weight training. You will build muscle and burn more calories weight training, it will raise your metabolism and your body will continue to burn calories for 72 hours after. But with weight training you will have to eat more calories as you need energy to build muscle.

Its very hard for me to eat even 1500 calories, unless i purposely eat something unhealthy, theres no way im gonna eat 2000 calories worth of health food a day.

The only exception is one day a week i splurge on all you can eat steak,and crab legs.I figure i prolly eat 1000-1500 calories there, but i burn 2500 calories throughout the day.I notice a day or two after is when i drop the majority of lb's that week.

I do notice that i have to ride more and more each week to burn the same amount of calories.It used to take 15 miles to burn 1000 calories, now it takes me 25 miles to burn 1000 calories.I have to keep raising the intensity level to keep my HR above 160.

As far as weight lifting, im trying to slim down.My body is naturally muscular looking.I have a bulky upper chest, so even 30 pounds of fat on my stomach, just makes it level with my upper chest.If it wasnt for my face filling up, everyone thinks im a body builder..lol, but seriously i hate looking/being stocky.
