My Mushroom Soup ...

I make a pretty good mushroom soup :) I make big pot for Vlad (my feoncee ) and Me which lasts about a 7 - 10 days. It might contain a more charbs then required generally because of the barley but try it ...

INGREDIENTS

" 1 med onion
" 3 med carrots
" Dried mushrooms**
" Few handfuls of barley
" Extra Virgin Olive Oil (evoo)
" 1 big or 2-3 small potatoes


**you can substitute with fresh mushrooms as well, comes out just as good


METHOD

Soak mushrooms in cold water. I had soaked them overnight but 40min to 2 hours will do the trick. They will soften up and get rid of the sand. I had also switched the water 3 times. Put into a pot of water and start cooking.

Start a pot of water for the barley, once it starts boiling add it. (15 - 20 min to cook) Once cooked drain and drop into the soup pot.

Chop up the carrots and onion. I used a mini food processor, if you do that make sure not to do it too fine or you'll end up with carrot & onion soup, lol Fry with EVOO until golden, then combine into the soup pot.

Chop the potato(s) into cubes, the smaller the faster it will cook. I made them medium bite size peaces. Drop in the soup.

Add salt and pepper to taste!!!!

Cook it until everything is cooked to your likening. My consistency was between a soup and a stew.


Normally this recipe also calls for sour cream and way more potatoes then I use but since we are all dieting I'd stick with this. Also another tip when frying up with oil try to use minimum but making sure it doesn't burn up, depends on what type of dishes you have.

Stainless steal : cooks longer and requires more oil
Non-stick: faster and less oil


I use stainless steal because the fumes from non stick cook wear is very harmful to my pet ... and I rightfully assumed if its harmful for birds its not the best for humans ether LOL
