These Quesadillas are famous in my family, they are scrumptious, and pretty dog-gone healthy
HunterRose's Quesadillas
Ingrediants
2 Chicken Breasts, boneless, skinless, cubed
1 Red Bell Pepper
1 Yellow Bell pepper
1/2 Green Pepper
One Onion, Finely Diced
Canola Oil (enough to sautee veggies & meat)
8 tortillas (about fajita size)
Colby Jack Cheese (about 4 ounces shredded will do)
Chili Powder (to taste)
Lemon/Lime Juice (optional)
Hot peppers (optional)
Recipie
1) Mix Chicken cubes with Chili Powder, and Juices until chicken is evenly coated, marinate.
2) while chicken marinates, turn oven on and roast peppers (in 1/2 sections) until they blister, remove and put into an ice cold bath for 15 minutes. Remove and discard skin, and finely dice.
3) Turn the stove on and pour 1 tablespoon of oil inside; when oil is hot, put peppers and diced onions into the pan and sautee until the onions are clear and the peppers are tender; remove veggies from stove.
4) add about 1/2 teaspoon oil to pan and put chicken cubes in, cook until chicken is nearly cooked, add veggies and stir together. Once chicken is fully cooked take mixture off of heat. Take two tortillas (each 2 make one quesadilla sandwhich, and layer 1/2 ounce cheese, about 1/6 of the veggie.meat mixture and another 1/2 ounce of cheese, put on the same pan you have been using, and cook the tortillas till golden brown and cheese is melted. Repeat 4 times.
5) The extra mixture and cheese makes wonderful ultimate nachoes with on the next day =D
