6 servings - each around 150 cals..
Ingredients:
3 slice of bacon, cut into one inch pieces
1 large onion, chopped
3 cloves garlic, minced
1 1/2 lbs mushrooms, cut into bite sized pieces
1 T tomato paste
1 can broth (beef, veggie, or chicken - use low sodium) (29oz)
3 cups water
1 cup quick cooking barley
1 teaspoon oregeno
1 teaspoon red wine vinegar
salt and pepper to taste
Directions:
1) In a large pot begin to cook the bacon until it is nice and browned
2) add the onion and garlic, cook until onions start to brown
3) add the mushrooms, cook until they release their liquid and then it evaporates, keep stirring
4) add tomato paste and stir
5) add broth, water, and let warm
6) add barley and oregeno, bring to a boil and then reduce to a simmer for 10-15 minutes
7) season with salt and pepper
8) add the red wine vinegar for a kick.
