Mock}Loaded Baked Taters

~Stacy's Mock Loaded Baked Taters~

- Great as a side dish/main dish! -

It comes so close to a real baked tater taste!

1 bag frozen cauliflower - microwave 6 minutes drain well!
(very important)

Enough Fat Free Sour Cream to make creamy texture {1 c.}

4-5 chopped Green Onions w/tops

Low Fat Shredded Cheddar Cheese {almost 1/2 c. should be mixed w/all other items in bowl.}

4-6 thick pcs of Turkey Bacon cooked and crumbled
{I use kitchen scissors and cut in strips}

Salt and Pepper to taste

Mix all ingredients in a large bowl

Pour into an oven safe dish. Top with a light sprinkle of cheese.

Bake at 350* for 20-30 minutes or until desired doneness.

That 30 minute meal chick, I'm blanking on her name, has a similar recipe - are you mashing the cauliflower ir just tossing it with the other stuff?

Isthe microwaving the important part (I haven't owned one in 5 years) or the draining well part important?

It stays whole.

You can cook on stove/steam by directions..Just make sure to drain well..

I use a colander and drain on paper towels.. You don't want a watery end product. ;)

**I forgot to mention what to do w/cheese..lol**
