It's been raining for two days, and i'm growing mold while I research how to build an arc and need some nourishment before heading out to collect the animals... this calls for rainy day comfort food
Mal's Meatloaf
1lb of meatloaf mix - (meatloaf mix is that combo pack sold in most grocery stores -where it's equal portions of ground veal, pork and beef - though ground beef and/or ground turkey would suffice)
1 8 ounce package of mushrooms
1 zucchini, cut in chunks
6 ounces baby carrots
1/2 medium onion
2 cloves garlic
t tbs cumin
1 tbs oregano
In a food processor, add carrots and grind up. Remove to large bowl, add mushrooms and grind up and add to bowl, add zucchine and grind up and add to bowl. Repeat with onion and garlic
(Note - any vegetables could really be subsituted -it's really about adding some volume and moisture to the meat)
Add the meat to the ground vegetable mixture
(Note 2: if you're going vegetarian - cooked lentils or other beans could be added in instead of hte meat)
Combine well
Add Cumin and oregano
(Note 3: your favorite herbs/spices could be added)
Put meat/veggie mixture into mini loaf pans or in a cupcake pan sprayed with olive oil spray.
Bake til cooked thru about 30 minutes at 350 degrees
(note: i wil do these as single serving containers in mini loaf pans and cook in the toaster oven..)
Number of Servings: 4 large servings
