ummm -
I use either boneless skinless chicken thighs or breasts -whichever your pleasure
the marinade
juice and zest of 1 lemon
1 container of non-fat plain yogurt (though i'm not sure that the no fat ness is essential because most of the marinade gets tossed)
2 tbs of curry powder (hot or mild or a combo of the two)
2 cloves garlic, smashed
1/2" ginger, smashed (get as much of the juice as possilbe)
Combine the marinade in a bowl or a ziplock baggie and mush together well
Prick the chicken with a fork a few times and pt in marinade
mush well.
stick in fridge for at least an hour (doing it in te morning for dinner that night is also good- especially if using thighs because it helps to tenderize the chikcen)
grill or broil the chicken until done
