Biltong is a great low carb/keto snack, especially if made at home without any non traditional additives

Cut meat with the grain 1 inch thick, thinner if you want a faster cure

toast and grind coriander seeds

combine with rest of the spices, coat the meat and ad vinegar (making sure to sprinkle all surfaces of meat)

cover and put in fridge for 12 hours

I will post more when the meat is ready to hang in the Biltong drying box

i used to make fish jerky, but i lost my fish connection.
